Key Duties and Responsibilities
Receive and inspect meat deliveries for freshness, condition, temperature, packaging and supporting documentation; report concerns immediately.
Cut, trim, debone, portion, mince and prepare meat products according to customer requirements and approved specifications.
Package, label, weigh and price products accurately, ensuring product names, dates and other required information are correct.
Maintain appropriate chilled or frozen storage temperatures and rotate stock using first-expiry/first-out principles where applicable.
Clean and sanitise work surfaces, knives, saws, mincers, weighing scales, display cases and other equipment before, during and after use.
Keep raw and ready-to-eat products appropriately separated and follow safe handling, personal hygiene and cross-contamination prevention procedures.
Monitor display quality, replenish products as required and provide courteous service and product guidance to customers.
Record wastage, stock usage, returns and temperature checks; report equipment faults, shortages and potential food-safety risks.
Qualifications, Experience and Competencies
Practical butchery training or relevant hands-on experience in a butcher shop, supermarket or meat-processing environment.
Knowledge of meat cuts, portioning, safe knife handling, sanitation and cold-chain practices.
Ability to operate butchery tools safely and perform physical tasks while standing for extended periods.
Good customer-service skills, attention to detail, personal cleanliness and willingness to work shifts, weekends and public holidays.
